Fresh fish, regional and sustainable!
The Forellengut Rosengarten is located in the small town of Trassem in the Saar-Hunsrück Nature Park. Rainbow and brown trout, char, sturgeon and many other fish species have plenty of room to swim in the natural ponds and on the flowing channel. The fish shop offers a wide selection of fresh and smoked fish, fish pies and fish soups, all produced in the best artisanal tradition. In particular, the brook trout often finds its way onto the menus of regional restaurateurs.

Food lady Jutta Hehn has once again set out and visited the trout farm Rosengarten. Inspired by this, she has developed a creative recipe for an appetizer variation from the farm fish: “Char tartare and praline with smoked salmon trout”. What did she experience? Read for yourself:
At the trout farm Rosengarten in Trassem near Saarburg, sustainability is the order of the day across the board!
The Rosengarten family has been running their fish farm in the middle of the Saar-Hunsrück Nature Park for over 60 years. The fish live in 30 naturally created ponds and a surrounding flowing channel in fresh water from Leuk and Muschbach. Marc Rosengarten has been running his parents' business for 20 years, focusing on sustainable fish farming. It was not always clear that he would take over. Little by little, he says, the desire arose to make the fishing industry his profession. He was taken with the idea of working outdoors in nature. And being able to observe and shape the cycle from larva to magnificent fish is what makes the work so exciting.
Direct contact with the fish is important to the lord of the manor. He feeds them by hand every day so that he can see how they are doing: “If they eat with gusto, I know that everything is fine.” The food does not consist of fish oil or fish meal, as is usually the case, but of algae. This is also sustainable, as fewer small fish are plundered from the waters. The well-being of the fish is our top priority, and a fish feels comfortable when it has sufficient oxygen, among other things. Fluctuations in the oxygen content of the water cause stress for the fish, and stress makes it susceptible to disease. Therefore, all basins are automatically aerated and monitored by means of sensor technology. This way, the fish can enjoy a comfortable and healthy life.
Three to five kilos of fish live in one cubic meter of water, which is a very low stocking rate. The pools are home to stately salmon trout, native brown trout, shimmering golden trout and, above all, brook trout. There are also carp, sturgeon and pikeperch. The motto is pure nature instead of factory farming. The treasures can be purchased in the small farm shop. Fresh and smoked fish, where I find the Stremel of the salmon trout particularly delicious. There are fish sausages, fish soup and fish pies. Fish platters with the finest organic spices can also be ordered. In 2010, the gourmet magazine Der Feinschmecker ranked the company among the best fishmongers in Germany. Sustainability has been certified since 2011. Currently, master fishmonger Marc Rosengarten is on his way to becoming a fish sommelier, an ambassador for fish and good taste. This is a further challenge for him to achieve even better conditions and products. Something to look forward to!
