Dandelion (Bettsäächer)

Dandelion is one of the first wild herbs that nature offers in spring. Important for preparation: it must be harvested before the plant flowers.

You can actually find dandelions everywhere. In the meadow behind the house or on a walk. But always wash the leaves well when you pick them yourself! Alternatively, you can also buy the leaves at the weekly market.

The young leaves are rich in vitamins and minerals and are valued for their detoxifying effect. Dandelion is often used in salads or as a pesto or in smoothies. In the Saarland, dandelion is traditionally known as "Bettsäächer" salad.
